Making a Cake

Gentle Readers and Dear Friends thank you so much for all your kind comments about yesterdays post.  Although I have really enjoyed stitching Shores, I am ready to wrap that sucker up!!  I was asked if I have all the HRH charts - the answer is yes, I have already stitched up Village at HRH and this will be the second HRH for me to finish.  I think this is a great series.  Looking into the future after Autumn at HRH I think I'll probably do Christmas and then wrap up the series with Houses, but that's a long way off.....

Last night I worked on Shores, that will be the project of choice until it is finished.....

Now, on to the Cream Cheese Coffee Cake.  I often catch on PBS "Americas Test Kitchen" a great show and so easy to follow - in fact of the 4 Magazines I get - 2 of them are "Cooks Illustrated" and "Cooks Country."  The recipe can be found on their Web Site - HERE - I won't re-post that, but I will show some snaps of me making it .....

One of the great things about this recipe is that for the most part the ingredients are things you would probably have in your kitchen - I had everything except a lemon!!

So get everything together first - I like to do this just to be organized.

First you make the crunchy topping.. then the batter... then the filling.... reserving 1 cup of batter...


Spread the filling around in the middle ready for that last cup of batter to cover....

After spreading that last bit of batter you swirl in figure 8's the move the filling about.... I used a long skewer....

Then you sprinkle the lemon zest/sugar/almond sliver topping over the cake, pressing slightly so that it sticks....


After about an hour  - and a toothpick comes out clean - you take the cake out, cool it in the pan for about an hour, then turn it out for another 1 1/2 hours of cooling before slicing.....


I was very happy to find this recipe as Rico really enjoys a cream cheese coffee cake - and this is a really easy and tasty one!!!  The only two changes I made were to grease and flour the cake pan (the recipe calls for just a spray of Pam) and I cooked it at about 325 degrees for a little longer than called for.  I like to cook larger cakes and bit longer on a lower temperature.

    The pound cake looks delicious! I LOVE pound cake but my husband does not :-( It is probably good that I don't have it too often. He does like cream cheese, however, so I will have to try this recipe.

    Shores looks great. Without looking back through your blog, about how long have you been working on it? Since getting back into cross stitch I am working on small projects and haven't quite gotten the gumption to start something big. Just wondering if it is worth it.

    1. Hi Linda - this was a really tasty cake, a great crumb. I have been working on and off on Shores since August 2010. I totally think these BAP's are worth the trouble, and I enjoy doing them.

  4. Thanks a bunch, I just drooled all over my keyboard!! =) Just kidding...I'm totally signing up for that link. I used to get Cook's Illustrated and it was a great magazine, although they did tend to get a little too "uppity" about some things that I didn't think were such a big deal. =) Probably how I am about Star Wars vs. Star Trek, LOL!!

  9. Edgar, the cake looks soo good. yum! I enjoyed reading your thoughts about Shores. I too, am stitching away on Shores and will stick with it until I have it finished. I'm currently on the double block of the ship. I have stitched the Village, and Christmas. I would like to do the Autumn one as well sometime in the future. I am getting a little tired of Shores; but will persevere until I have it done. Congrats to you for being so close to a finish on it!!
