A Little Bakin'

Gentle Friends... I decided to make a cake, and already had a recipe picked out... from Sally's Baking Addiction, a super Blog - the cake I wanted to make was a "Cheesecake Swirl Carrot Cake"...  after cooling and a quick glaze..... 

...   I think what attracted me to the cake was the tunnel of "cheesecake" it was a great addition!!

...  I substituted crushed pineapple for apple sauce because that's what I had in the cupboard.  I also used a mixture of currants and raisins - this was such a great Fall tasting cake that I am sure I'll make it again!!  I didn't use a Bundt pan, but my stand by tube pan which I like it better.  The cake was super moist and had a great flavour!

  6. At one time, one of the big companies made "pineapple sauce" - just like applesauce. It almost always made a tastier product. :-)
