Lemons in Season.....

Gentle Friends, the Meyer Lemons are coming in now and we are on the receiving end of lots of them -  my bowl runneth over!!   So, over the weekend I baked up a pan of lemon Bars.......

.......  I made them back in November using THIS recipe, they are so good....  a buttery shortnbread crust and tart filling........  I think I'll be making a double pan of them this weekend for Rico to take to work.  I've been given so many lemons I am contemplating making some marmalade.  I love the stuff and it seems like a conjunction of "lemon love" and empty jars on the shelf, so why not.  I've never tried to make marmalade so I am kind of excited to try my hand at it.....  any suggestions????

  2. I've made lemon curd before and it turned out really well. I've never made marmalade with lemons - I would give lemon curd a try, it was easy to do.

  4. Yum! That looks delicious! I love to make jams, preserves and marmalade. I have a cupboard full. I have learned to follow the recipe precisely. I found out that it will not set up properly and is runny, more like an ice cream topping. I ruined 15 pounds of strawberries trying to make a double batch. You know, a batch of scones would go nicely with the lemon marmalade.

  5. Personally I am not a fan of marmalade so another idea is you could make lemon curd/lemon butter.

  7. I have never made maralde either. But a lemon marmalade sounds just yummy. You might try a bit of ginger in some of it. Mmmmm

  8. I love lemon anything! I first made those bars in junior high when I found the recipe in the Peanuts Cook Book which I purchased for 60 cents from the Scholastic Book Club at school : ) I was only interested in the Peanuts characters in the book, but found out there are surprisingly good recipes including one for lemon bars. There's a great one for divinity too! I may have to do some baking today : ) Unfortunately I don't know of a recipe for lemon marmalade.
