A Great Cake!!

Gentle Friends thanks so much for your kind comments and emails I really enjoyed reading them over again - and I am slowly catching up on my back email answering - slow and steady!!

My Sunday baking focus was on a really superior pumpkin cake.  I found the recipe over at Flavours by Four - but it originally came from Food.com.  Well, wherever it came from it's a pretty terrific cake!!  The only thing I will do different next time - is leave off the streusel topping, it sticks pretty bad and does not add to the cakes appearance or taste - IMHO.  I took some snaps along the way....

.......  after turning it out of the pan and scraping the streusel from the pan...  as I said before leave the streusel off...

.....  a quick icing glaze pretties the cake up a bit......


......  all sliced up ready for serving.  The other change I made was to add a lot more nutmeg than called for (surprise).  This cake is dense and moist, just perfect with a cup of coffee or tea!!

I got a question in an email last week I though was interesting and worth a mention on the Blog - the question was  "Why don't you ever do anything with bananas?"   I have a single answer they make me gag!!  I do not eat, touch or go near them, never have, never will.  The only thing banana-ish I can deal with is my mothers banana bread and then only a little piece.   So there you go, you will never see me cook with or deal with bananas here ever.

    You crack me up with the "bananas make me gag" line. They are kind of a gross and squishy sort of thing. Aww that's a real compliment to your Mom about her banana bread, if you don't like bananas but you'll eat (small piece) of your Mom's banana bread. :)

  3. Your banana reply made me laugh. My 17 year old son has a serious banana phobia; he can't touch them, smell them and he def. can't eat them. We think it is because they were an easy, healthy food source when he was very small and in hospital: he must have associated them with being very poorly indeed. So stay clear of them lol!

  6. Your pumpkin cake looks quite yummy! And I totally agree with you on the banana thing. I will eat a small slice of my Mom's banana bread at Thanksgiving and that is it!

    I love to bake with pumpkin. Nutmeg (and curry) is my favorite spice. Well not together...you know what I mean. Ha!
    I too think it's sweet that you have a little piece of your mom's banana bread.

  10. Bananas - yuk - I'm with you here Edgar - I can't stand the smell, the taste or the texture- even the thought of them turns my stomach!
    Now your pumpkin cake is a different matter - save me a slice and I'll there in time for tea ...

  13. LOL!!! I loved bananas when I was a kid, but I can't deal with them now. I do love plantains, but only if they are carmelized (maduros) or mashed and fried (tostones)!!! This cake looks awesome! If the streusel sticks, I'd just put it on the bottom next time (the top of the pan). Who cares if you can't see it? =)
